MEET CHOCOLATIER BLESSIE CASUL
Hi. Chocolate is my passion and I believe that my confections show that passion. We elaborate our bonbons only with the best cacao in the world. Did you know that only 5% of the cacao in the world is considered to be "cacao fino y de aroma" (fine flavor cacao)?
I select chocolate based on taste, origin, or technical characteristics. I currently use a composition of rare Criollo and Trinitario beans from Madagascar which provides a fresh, acidic, sharp bouquet with red fruit notes.
When you experience our confections, you will enjoy them through all your senses: taste, appearance, smell, touch and even sound. Yes, sound indeed.
Also, what makes my confections unique is my desire to merge the flavors from fresh tropical fruits from my native Puerto Rico as well as herbs, spices and spirits from the far reaches of the world.

QUALITY CACAO FROM AROUND THE GLOBE
The quality of chocolate is greatly determined by meticulous cultivation of cacao beans in tropical climates, precise treatment of cacao beans. The final product is driven by a complex and intricate process where the dedication of farmers, craft chocolate-makers and chocolatiers are all essential parts of the elaboration.
Much like coffee or wine, chocolate quality depends on factors such as geography, soil composition, and farming techniques. The cacao beans must endure a long process that includes fermentation, drying, and roasting, all of which determine chocolate’s ultimate quality.
Although we are currently sourcing our cacao from abroad, we are proud to say that Cacao from Puerto Rico is also amongst the highest quality cacao beans in the World. Originally brought by Spaniards from Venezuela, our cacao have unique characteristics that are at par with the 5% cacao fino y de aroma of the World.
Indeed, we are also proud to be part of the Cacao growers in Puerto Rico. We are cultivating both Criollo and Trinitario cacao in our farm in Gurabo, Puerto Rico and hope to share with you and the World our confections with our own homemade chocolate. But, we will have to wait a little since productive trees take 3 to 5 years to grow and we are currently in the initial stages of our farm.
